Blender Broccoli-Cauliflower Soup

This recipe comes from Heather Robertson at www.heatherrobertson.com.  I came across this recipe when I was exhausted from a long day of work.  I needed a cooked meal that would be quick, easy and satisfying. I had cauliflower, broccoli and green peas in the fridge.  Man!  I just realized that I could have added a zucchini!  Darn it. At least I remembered the freshly shelled peas.  So yeah, follow this recipe, but if you want to add a little zucchini or some peas, chuck them in.  I found it to be a little bitter at the end, so I squeezed in some lemon and that fixed it up just right.

This broccoli cauliflower soup is thick, creamy and is the perfect comfort food on a cold day. Full of vitamins, nutrients and antioxidants this soup hits the mark when it comes to healthy eating.

INGREDIENTS

3 cups water

1 cup raw cashews, unsalted

1 tsp raw honey

1 cup broccoli florets

1 cup cauliflower florets

Flesh of 1 ripe avocado

2 garlic cloves

1 tbsp extra virgin olive oil

1 tsp dehydrated onion

1 tsp sea salt

1/4 tsp cumin

1 tsp black pepper

DIRECTIONS

Combine all ingredients into the Vitamix and secure the lid. Select the hot soup pre-set and switch it on. Let the Vitamix run through the full cycle. Once finished, pour the hot ingredients into a serving dish and sprinkle with a small amount of cheese if desired. I used a goat feta!
